What we need...
Ingredients
- 1kg peeled, and deseeded Red kuri squash (Hokkaido squash) (chopped into chunks)
- 1kg peeled, and deseeded butternut (chopped into chunks)
- 2 finely chopped onions
- 5 chopped carrots
- 2 peeled and chopped garlic cloves
- 1 litre vegetable or chicken stock
- 200ml double cream or natural yoghurt
- 50g butter
- 1 teaspoon pepper
- 1 teaspoon salt
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1/4 cup maple syrup
- Olive oil
Decoration
- 1 packet of pumpkin seeds
- 6 slices of wholemeal seeded bread for crunchy croutons
Kitchenware
- 1 large saucepan
- 1 frying pan
- Hand blender
How to cook...
- Heat 50g of butter in a large saucepan, then gently cook 2 finely chopped onions for 5 minutes, until soft but not coloured.
- Add 5 chopped carrots and 1kg of peeled, deseeded and chopped pumpkin or squash to the pan, then carry on cooking for 8-10 minutes, stirring occasionally until it starts to soften.
- Pour 1 litre vegetable stock into the pan, then season with salt, pepper, nutmeg and cinnamon. Pour 1/4 cup of maple syrup. Add 2 chopped garlic cloves. Bring to the boil, then simmer for 10 minutes until the squash is very soft.
- Pour 200ml of double cream into the pan, bring back to the boil, then purée with a hand blender.
Soup decoration
- Slice the crusts from 6 slices of wholemeal seeded bread, then cut the bread into small croutons. Heat 2 tbsp olive oil in a frying pan, then fry the bread until it starts to become crisp.
- Add a handful of pumpkin seeds to the pan, then cook for a few mins more until they are toasted.
- Serve the soup scattered with croutons and seeds and drizzled with more olive oil.
